Even if you don't have a panini maker, you can prepare this sandwich in a standard skillet instead!

6 | fully cooked breakfast sausage links, sliced in half lengthwise | ||

1 | teaspoon | butter, plus more for bread | |

3 | large eggs | ||

6 | slices | thick cut sourdough or Artisan bread | |

3 | slices | Swiss cheese | |

3 | green onions, chopped | ||
|
In a medium skillet, warm split sausages for three minutes; remove from pan and set aside.
Melt butter over medium heat. Add eggs and fry to desired doneness.
Heat a panini maker or a grill pan over medium-high heat. Add three slices of bread, buttered side down. Top each slice of bread with a slice of cheese, green onion, two split sausages and a fried egg. Top each with remaining slice of bread, buttered side up.
If using a grill pan or skillet, place a heavy skillet or heat-proof dish on top to weigh down paninis as they cook. When bottom slice is golden brown, flip the sandwich and brown the remaining slice of bread until golden brown.
Serve warm.
